If you're like me, or anyone else on the planet, fall just might be your favorite time of the year. The weather is perfect for so many things, especially a great big bowl of soup or a lazy day after getting home from work.

What goes better with lazy day and a bowl of soup than a crockpot recipe?



This is seriously just about the easiest recipe to make, it's inexpensive, and it's so good, I almost ate the entire pot of soup. 

So here's what you need:
16 ounces of chicken stock (go low soon, if you'd like)
12 ounce can of tomato paste
2-12 ounce bags of frozen veggies (vegetable soup mix)
1 regular pack of hot dogs (beef, pork, whatever, it's up to you!)

Here's what you do:
1. Empty entire box of chicken stock into crockpot. 
2. Scrape can of tomato paste into crockpot. Fill empty tomato paste can with water and dump into crockpot (repeat two times). 
3. Dump both bags of veggies into crockpot. 
4. Chop up entire pack of hot dogs into baby-sized pieces. Toss into crockpot. 
5. Turn pot to low and cook for 5-6 hours (or high 3-4 hours). Stir occasionally. 
6. Enjoy immediately or whenever. 

This makes several servings, so you may have a few days of leftovers. Enjoy!

Alternatively, you can add cooked chicken or browned ground beef instead of weenies. It's all up to you.
